There’s no Jamaican meal more famous than jerk chicken. Allspice, thyme and ginger are the signature ingredients of the marinade used for chicken, along with the dynamite known as Scotch Bonnet pepper; the bird is cooked slowly over pimento wood. The result is smoky, spicy and deeply flavorful a real taste of Jamaica.

Ackee and Saltfish: The National Dish
