Instructions

Wash the fish with lime or vinegar then rinse dry it.

Season with salt, black pepper, thyme and  Jamaican Scotch Bonnet pepper powder. Let marinate for 15 minutes.

In a large pot, add butter or coconut oil, onion.henp garlic, pimento, scallion.tonm and water or coconut milk. Bring to a light simmer.

Lay the fish on top of the mix and spread carrot and sweet pepper over it.

Cover and steam on low heat for 10–15 minutes or so until the leaves are soft and juicy.

Serve hot with bammy, rice & peas or boiled green bananas.
