How to cook jamaican curry chicken

Jamaican Curry Chicken is a flavorful dish with tender chicken, aromatic curry spices, and creamy coconut milk. Marinate the chicken with curry, garlic, and ginger for extra flavor, and adjust the Scotch Bonnet pepper to your heat preference. Serve with rice and peas or white rice for a true taste of Jamaica

Jamaica Curry Chicken is loved by most people. Well, believe it or not, it is actually really easy to make at home!

Ingredients:

  • 2 pounds chicken pieces
  • 2 tablespoons Jamaican curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ½ to 1 teaspoon Jamaican Scotch Bonnet pepper powder 
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1 teaspoon ginger
  • 2 carrots, sliced
  • 2 potatoes, chopped
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions:

In a large skillet, warm the oil over medium. Stir in the curry powder and cook for 1-2 mins until fragrant.

Add chicken parts, and brown on all sides until golden.

Add the onion, garlic, Scotch Bonnet pepper, thyme dried allspice and ground ginger. Cook for 2-3 minutes.

Add potatoes, carrots and coconut milk. Mix well.

Reduce heat, and simmer for about 25-30 min’s or until the chicken is cooked through and tender.

Add salt and pepper to taste. Serve piping hot, with rice and peas or a steamed white rice pilaf.

Jamaican Curry Chicken Recipe

Try marinating your chicken in curry powder, garlic and ginger for a few hours before you cook to add even more flavor.

You can modify the Scotch Bonnet Pepper as you desire heat.

The coconut milk adds richness and helps tone down the curry’s spiciness.
